Winetech 2020 Study Group 3

The third Winetech 2020 study groups were presented during October in the participating regions to groups of a maximum of 20 cellar assistants. The tasting of faulty wines and the evaluations were cancelled to minimize possible health risks. In some of the participating areas multi-lingual sessions were presented to reach as many cellar assistants as possible, bearing in mind the strict Covid-19 regulations, which applied to the Winetech 2020 study groups.

During the third study group the different lactic acid bacteria; factors influencing malolactic fermentation (MLF); desirable and undesirable MLF and the winemaker’s decisions were discussed. Aspects such as spontaneous and inoculated MLF and the monitoring thereof, as well as secondary fermentation were included in the content.
